DipTacular Blog Party

August 31, 2011

Sometimes other bloggers host “parties” and want you to blog about a certain topic and then link up to their blog so everyone can see what you’ve posted.  I love these but never do them {which is probably one of the reasons I only have five loyal readers!}.  A popular blogger named BooMama {I’m pretty sure that’s not her real name!}  is hosting a “DipTacular” party today and I thought it would be fun to play along.

I LOVE this Spinach & Artichoke dip.  Sooooo yummy!

Baked Spinach & Artichoke Dip

1 cup mayonnaise
1 cup fresh grated Parmesan cheese
1 can artichoke hearts, drained & chopped
1 box (9 oz) frozen chopped spinach, thawed & squeezed to drain
1/4 cup shredded Monterey Jack cheese
Tortilla chips

Heat oven to 350º.
Mix mayo & Parmesan cheese together.  Stir in artichokes and spinach
Place mixture into a small casserole dish (I use a 9×9 square baking dish)
Sprinkle with Monterey Jack cheese
Spoon mixture into 1-quart casserole. Sprinkle with Monterey Jack cheese
Cover and bake for 20 minutes (or until cheese is melted)
Serve with tortilla chips
Enjoy!

I’m dying to try Frank’s Redhot Buffalo Chicken Dip.  Has anyone tried it?  Sounds so good!
