Cinco de Mayo

Happy Cinco de Mayo!

What exactly is Cinco de Mayo anyways?  I just read online that it’s the holiday most celebrated that no one understands.  LOL!

I started celebrating with a morning trip to the grocery store.  But that’s a blog post all on its own. 

Nick had a kid from school over to work on a group project.  Can I just tell you how much I hate group projects?  I really hate group projects. 

(Teacher friends, stop assigning group projects!)

This afternoon, Brian and Nick headed out to meet a friend at the movies and Tay and I went shopping for summer clothes (for her, not me). 

Every time I turned the t.v. on this week there was somebody talking about preparing mexican food for today.  I decided to do a mexican dinner with a bit of a twist.

Buffalo Chicken Enchiladas

Three out of four of us liked them!

I also made some yummy guacamole

We finished our day of celebrating with snow cones…

Cause we’re cool like that.
